Spiced Nut Energy Balls

INGREDIENTS:

  • 3 cups almonds
  • ½ cup walnuts 
  • 1 cup clean cane 
  • 2 eggs (2 whites, 1 yolk) 
  • 1 tablespoon Rose water
  • 1 teaspoon Vanilla Extract 
  • ½ teaspoon Cardamom Ground
  • ½ teaspoon Fennel Seeds Ground
  • ¼ teaspoon Cinnamon 
  • ¼ cup pistachios (shelled)
  • ¼ tube (25g) YES Cacao Botanical Chocolate Chips

DIRECTIONS:

  1. Chop the nuts and place in a large bowl.
  2. Add sugar and all dry seasonings.
  3. In a separate bowl mix eggs, rose water, and vanilla.
  4. Mix liquids well then add to the nuts and sugar mixture. Mix well using a spoon.
  5. Form balls by hand. (You need to wet the hands every now and then so the dough will not stick to your hands.)
  6. Put the formed balls on a pan covered with parchment paper.
  7. Add a YES Cacao botanical chocolate chip on top. Press a bit to sink in.
  8. Bake at 410 for 12-15 minutes till color is right.
  9. Cool a bit on a dry rack and take off one by one.

You can keep in freezer once it cooled. As needed put in toaster for a minute or so and enjoy these CleanAF energy bites.
